This expression comes originally from the world of wild animals. It is well know that when a lion, a tiger or a panther bites another animal to eat it it gets even more wild and energetic from the moment it can taste blood. This is more or less an automatic reaction. A cat reacts perhaps the same way when it can taste the blood of a mouse.

When you say that a person tastes blood you mean that she or he is getting extra energy – getting really focused on finishing a job or a task.
